
Try this recipe for a mildly sweet dessert that’s comforting and delicious. Everyone loves a good apple pie & this one is healthy and delectable. Get creative with your own ideas and add things like chopped peaches or mangoes, raisins or cranberries. This makes a small pie so adjustments in measurements might need to be made depending on the size of your pan.
Ingredients:
Filling:
2 Apples, chopped
1 tsp Honey
Juice of 1 Lemon
Juice of 1 Orange
1 tsp Apple Cider Vinegar
1 tsp Cinnamon
Lemon & Orange Zest to taste
Crust:
1/4 cup Cassava Flour
1/4 cup Coconut Flour
1/2 tsp Tapioca Starch
2 tbs Coconut Oil, melted
2 tbs Water
Pinch of Salt
Directions:
Prepare the crust by mixing dry ingredients together, then add oil and water and make into dough. Set aside a small amount for pie topping. Form a crust around the bottom and sides of a greased pie pan. Bake at 350 degrees for 15 minutes and set aside.
In a mixing bowl, add filling ingredients together, mix well and pour over pie crust. Top with bits or strands of dough that was set aside earlier. Spray with coconut oil cooking spray & bake at 375 degrees for 45 minutes or until golden brown.
