Apple Pie

AIP Apple Pie

Comforting and delicious. Get creative with your own ideas and add things like chopped peaches or mangoes, raisins or cranberries.

Ingredients:

Filling:
2 Apples, chopped
1 tsp Honey
Juice of 1 Lemon + Pinch of Zest
Juice of 1 Orange + Pinch of Zest
1 tsp Apple Cider Vinegar
1 tsp Cinnamon

Crust:
1/4 cup Cassava Flour
1/4 cup Coconut Flour
1/2 tsp Tapioca Starch
2 tbs Coconut Oil, melted
2 tbs Water
Pinch of Salt

Directions:
Prepare the crust by mixing dry ingredients together, then add oil and water and make into dough. Set aside a small amount for pie topping. Form a crust around the bottom and sides of a greased pie pan. Bake at 350 degrees for 15 minutes and set aside.

In a mixing bowl, add filling ingredients together, mix well and pour over pie crust. Top with bits or strands of dough that was set aside earlier. Spray with coconut oil cooking spray & bake at 375 degrees for 45 minutes or until golden brown.

Sweet Potato Bread

This simple recipe is great for any season and can be modified to your liking. Add maple syrup, cinnamon and currants for a sweeter treat. Slice, toast & serve!
Ingredients:

1 cup Cassava Flour
1 cup Coconut Flour
1 can Pumpkin Puree
1/4 cup Tapioca Starch
1 tsp Baking Soda
1 cup Olive Oil
1 cup watering
Pinch of Salt

Optional:

1/4 cup Maple Syrup
1/4 Dried Currants
1 tsp Cinnamon

Directions:

Mix dry ingredients thoroughly. Add pumpkin, purée, oil & water and mix until workable with hands. Gold and compress repeatedly until even consistency. Shape the dough to a loaf. Place on greased baking sheet. Score loaf with knife and spray the top with oil spray. Bake at 375 degrees for 45 minutes or until golden brown. Let cool for 5 to 10 minutes before serving. Makes 4-6 servings.

Garlic Rolls

Make this recipe your own by adding other fresh herbs, minced carrots, turmeric, or anything you can think of. I hope this inspires you to cook up your unique creations!
Ingredients:

1 1/2 cup Cassava Flour
1/2 cup Coconut Flour
1/4 cup Tapioca Starch
Pinch of Salt
1/4 cup Olive Oil
1/2 cup Water
1 head Garlic, chopped finely
Chives
Parsley

Directions:

Mix dry ingredients thoroughly. Add all other ingredients and mix well until workable with hands. Shape dough into small rolls and place on greased baking sheet. Spray with oil spray and sprinkle with salt and chopped parsley. Bake at 375 degrees for 35 minutes or until golden brown. Let cool 5 minutes before serving. Makes 4-6 servings.

Avocado Cucumber Salad w/ Garlic Naan

This is one of favorite snacks of all time. I eat some variation of this meal for breakfast on a regular basis because it’s so satisfying and delicious. To make crackers, follow the recipe to make naan, then break them up into pieces and toast until crunchy. So good!

Naan Ingredients:

1/2 cup Cassava Flour
1/2 cup Coconut Flour
1 tbs Tapioca Starch
1/4 tsp Baking Soda
1 head Garlic, very finely chopped
2 chives, chopped
1 cup parsley, chopped
Pinch of Salt

Salad Ingredients:

2 Avocados, cubed
1 Cucumber, sliced
1 tsp Lemon Juice
1 tsp Apple Cider Vinegar
Pinch of salt

Mix Naan ingredients together in a bowl until blended well. Heat pancake-sized dough in a pan with a teaspoon of coconut oil until golden brown on one side, then flip carefully and brown or toast on the other side.

Combine salad ingredients in a bowl, mix well & enjoy!
